In order to perform more efficient evacuation of the air from products inside containers (8) and also increase the operating speed of the plant and at the same time reduce the construction costs, the plant is provided with a vessel (1) which defines a sealed chamber (2) inside which a vacuum is constantly maintained; the chamber (2) has inside it: - a seaming machine (11) designed to close the containers (8); - a storage device (4) located upstream and supplying the seaming machine (11), inside which the containers, not yet closed, remain for a predetermined period of time; said containers being introduced into the chamber (2) open or partially open and being extracted from the chamber (2) after being completely closed by the seaming machine; for this purpose a star-wheel conveyor (15) is provided, passing through the wall of the vessel via a through-slot acting as a vacuum sealing member. <IMAGE>
