PURPOSE:SOMEN (fine noodle made from wheat flour) is made using water containing Ca, Mg, K, Fe, Na and P in a specific proportion, thus giving good taste and texture as well as well-balanced nutrition. CONSTITUTION:SOMEN is prepared using water containing 0.1-0.2g, per 10 liters of water, of a calcium agent which is composed of calcium, 70-75%; magnesium, 0.05-0.1%; potassium, 0.05-0.1%; iron component, 0.25-0.3%, sodium 1.15-1.2%, phosphorus, 0.15-0.2%, and other nutrients. |
