A method to purify and crystallize β-amylase from sweet potato is presented. Thus, the ext. from sweet potato is heattreated at 60≦̸C for 10 min. The soln. is treated with acetone and centrifuged at 7000g for 5 min. The precipitate contg. β -amylase is adjusted to pH=3.6 with 1N-HCl and centrifuged for 8 min to remove γ-amylase. The supernatant is mixed with 3% ammonia water to adjust to pH=5. After treatment with acetone several times, the supernatant begins to crystallize to give β-amylase.
