PURPOSE:To surely eliminate residual chemicals from the surface of a dried SHIITAKE (Cortinellus shiitake, an edible fungus) and to obtain dried SHIITAKE which can be reconstituted to the state of raw SHIITAKE, by washing a dried SHIITAKE with ionized water, coating with gelatin containing ionized water and subjecting to a particular treatment. CONSTITUTION:A dried SHIITAKE is washed with ionized water to decompose a degradation-preventive agent applied to the surface of the SHIITAKE. The surface of the dried SHIITAKE is coated with gelatin containing ionized water to prevent the oxidization and excessive drying, etc., of SHIITAKE in the succeeding process and dried by far-infrared radiation. The dried SHIITAKE is reconstituted with ionized water and frozen under irradiation with far-infrared radiation. |
