PURPOSE:To efficiently prepare protoplasts of all the bacteria of the genus Lactobacillus, by reacting bacteria of the genus Lactobacillus with mutanolysin in the presence of a specific carboxylic acid salt. CONSTITUTION:Bacteria of the genus Lactobacillus, e.g. Lactobacillus acidophilus, Lactobacillus brevis, etc., are reacted with mutanolysin (N-acetylmuramidase SG) in the presence of a salt, e.g. sodium salt, potassium salt, etc., of a dicarboxylic acid, e.g. succinic acid, fumaric acid, etc., or tricarboxylic acid, e.g. citric acid, isocitric acid, etc.
