PURPOSE:To produce modified wheat flour having excellent secondary processing property to TEMPURA or cake and free from formation of bonded gluten even by mixing with water, by contacting wheat flour with a mixture of ethanol and liquid or supercritical carbon dioxide gas. CONSTITUTION:Wheat flour is made to contact with a mixture of ethanol and liquid or supercritical carbon dioxide gas. Preferably, the above mixture has a temperature of 35-60 deg.C and a pressure of 300-500kg/cm<2> and the contacting time is preferably 5-300min. The ethanol has a purity of preferably 95-99% and is mixed at an amount to give a diffused concentration of 4-6% in carbon dioxide gas. Since the wheat flour produced by the above method contains denaturated protein (gluten), it can be mixed with water without causing the bonding of gluten and has excellent secondary processing property to TEMPURA or cake and high preservability. The process can be carried out with simple operation in a short time without generating undenaturated part or scorched part. |
