The skin-holding device has at least two filling tubes (18, 19), which are arranged at an angle (17) and one of which is situated in the operating position in each case. They are held on a rotary valve (16) which in each case hydraulically connects the filling pipe, which is situated in the operating position, to an outlet channel (2) of a filling machine (1). The braking device (24), which is assigned to the end (30) of the filling pipe, for the gathered sausage skin (20) can be pulled off and/or pushed on, especially in a pneumatic manner. While the gathered sausage skin is being pulled off one filling pipe (18) and filled by the sausage meat, another gathered sausage skin (20) can be pushed onto the other filling pipe which is in the waiting position. This means that the transition from one gathered sausage skin to another can be carried out rapidly and, in particular, automatically stopped. In order to prevent the outside emergence of the filling material from the filling pipe which is in the operating position, the presence of the gathered sausage skin is continuously detected by means of a monitoring device (65). As soon as the rear end, in the flow direction, of the gathered sausage skin has passed this monitoring device (65), the filling pump of the filling machine (1) is switched off, after a delay (69) if necessary. The adjustability of at least the receiver (67) of the opto-electrical monitoring device (65) makes it possible for the monitoring device (65) to adapt to different diameters of the gathered sausage skin (20). <IMAGE>
