PURPOSE:A saccharide-containing cream composition in a high concentration, contained by adding a saccharide to an aqueous phase of a cream having a specific fat ratio to give a specified concentration in water, preservable for a long period and suitable s a raw material for ice cream, confectionery, cooking, etc. CONSTITUTION:A cream composition containing a saccharide in >65%-<=70% concentration in water in an aqueous phase of cream having >60%-<=70% fat ratio. Examples of the above-mentioned saccharide include monosaccharide, e.g. glucose, fructose and sorbitol, etc., and/or oligosaccharide, e.g. maltose, sucrose, lactose, starch hydrolyzate, isomerized lactose and maltitil, etc. The above-mentioned cream cmposition in a high concentration is obtained by preparing a cream having, e.g. about 80-87% fat ratio, as a starting material, putting the cream in a tank, etc., keeping the cram at >=40 deg.C, adding the saccharide to an aqueous phase to give >65%-<=70% concentration in water, mixing both while stirring to dissolve the saccharide and cooling the resultant solution to about 15-25 deg.C. |
