PURPOSE:To keep shelf stability of packaged food well, by arranging live yeast and its nutrient source in an isolated state from a food and forming a gas to suppress growth of a bacterium growth inhibiting substance and aerobic bacteria. CONSTITUTION:Live yeast and a nutrient source necessary for fermentation of the yeast are supported on a carrier which sufficiently keeps the blend of them and has low water activity reduction ability are put in a bag or container consisting of a film, etc., having high permeability to a carbonic acid gas and to ethanol. Then the bag or the container is sealed in a container in which a food is stored in such a way that the bag or the container is not directly brought into contact with the food, air in the interior of the package is extracted and the package is sealed.
