PURPOSE:To obtain maltose in high yield, by treating starch or liquefield starch with amylase G4 of the genus Bacillus and a maltose forming enzyme. CONSTITUTION:Starch or liquefied starch is treated with amylase G4 of the genus Bacillus and a maltose forming enzyme to give maltose. Novel amylase forming bacteria are searched for in a wide natural world in order to establish production of oligosaccharides of maltose or more from starch. Consequently, a novel amylase to hydrolyze alpha-glucan such as amylose, amylopectin, starch, etc., into maltotetraose is recognized to be produced by a bacterium identified as Bacillus circulans and this enzyme is named amylase G4. When this enzyme is used with a maltose forming enzyme such as beta-amylase, maltose can be produced in a high yield of 70-80% even from amylopectin or starch containing it. |
