PURPOSE:To obtain ester of a wide variety of alcohols and fatty acids in high concentration, by preparing a specific lipase using a mutant of Candida cylindracea and reacting a mixture of an alcohol and a fatty acid with the lipase under dehydration in the presence of an organic solvent without adding water to the reaction system. CONSTITUTION:A mixture of (A) an alcohol having one hydroxyl group such as a 1-30C aliphatic primary alcohol, a 2-20C aliphatic secondary alcohol, a 4-10C alicyclic alcohol, etc., or an alcohol having >=2 hydroxyl groups such as a >=2C aliphatic polyhydric alcohol, a 4-10C alicyclic polyhydric alcohol, a 5-7C monosaccharide, etc., and (B) a 2-22C saturated or unsaturated fatty acid is dehydrated in the presence of an organic solvent essentially without adding water to the system and is made to react with a lipase produced by a mutant of Candida cylindracea. The mutant does not assimilate xylose and can produce >=800 unit/ml of lipase in the medium.
