PURPOSE:To provide an emulsified flavor composition containing a water- insoluble or hardly soluble flavor, whey protein and an acidulant as essential components, having a pH falling within a specific range and having excellent dispersibility and stability. CONSTITUTION:The objective composition contains (A) a water-insoluble or hardly soluble flavor such as orange oil, lemon oil, terpineol, etc., (B) a whey protein as an emulsion stabilizer and (C) an acidulant such as citric acid, tartaric acid, gluconic acid, etc., and has a pH of 1.0-4.5, preferably 1.5-3.5. |
