PURPOSE:To obtain the titled acid in high yield while suppressing production of succinic acid as a by-product, by heat-treating a fumarase-containing medium or an immobilized material thereof in an aqueous solution of L-malic acid or its salt, followed by reacting the treated substance with fumaric acid or a fumarate. CONSTITUTION:A mold such as Brevibacterium flavum MJ233, etc., having fumarase or an immobilized material obtained by immobilizing the mold to f filmy high polymer, etc., is heated in0.01-5 M aqueous solution of L-malic acid or its salt at 4-10 pH at 40-60 deg.C for 10min-5hr to carry out suppression treatment of production of succinic acid as a by-product. Then, in the presence of the prepared mold or its immobilized substance, fumaric acid or a fumarate such as sodium fumarate, etc., is subjected to an enzymatic reaction at 15-60 deg.C to produce L-malic acid. |
