The present invention relates to a device permitting the preservation and maturing of cheese by recreating a small cellar, formed by a standard commercial clay container, accommodated in a piece of furniture with a bottom, a door and heat insulation. A piece of ice in a tray to be changed daily recreates the atmosphere of a cellar by providing the moisture and the cool air required by virtue of an adjustable shutter for intake of air which diffuses and spreads over the inner clay walls, after having been in contact with the piece of ice, a natural air circulation occurs on the inside and, by virtue of a difference in temperature, air emerges through a cutout in the bottom. A signal indicating complete fusion appears on the closed door, triggered by a counterweight placed on the piece of ice in its tray. <IMAGE>
