PURPOSE:Saccharomyces cerevisiae suitable for a method producing bread from frozen dough, having saccharide resistance and a mold in a logarithmic growth phase showing high freeze resistance, separated from a banana. CONSTITUTION:A yeast mold having mycological properties of Saccharomyces serevisiae is separated from a decomposed banana, cultivated and obtained. Then, the mold has sufficient saccharide resistance of high-saccharide dough fermentation ability by the experiment of a bun dough shown by the figure I, and in the freeze resistance shown by the figure II, a bread dough is fermented for 0-150min at intervals of 30min, frozen and stored at -20 deg.C for 7 days, thawned, bread producing properties of the dough is compared with those of a baker's yeast on the market, the dough expands well with fermentation time and the mold in an active state of a logarithmic growth state shown extremely high freeze resistance, so that the mold is named Saccromyces cerevisiae IFTY-2(FRI-501).
