In terms of the process, filling a cavity in a fermentation vessel, resulting from withdrawal of fermenting material, by water or air by introducing these media into a flexible container, located in the fermentation vessel interior, in an amount corresponding to the fermenting material withdrawn, prevents a flavour-impairing oxidation of fermenting material, which originates from the atmospheric oxygen present in the wine barrel. In terms of the apparatus, this is effected by means of a water- or air-tight bag, suspended in the fermentation or storage vessel, which bag has a feed and outlet line passed through the fermentation vessel wall. <IMAGE>
