<p>The process comprises forming, and fermentation of 20-25 deg.C with an 80-100% moisture content for 90-210 mins. The material is then cooked, first at 180-190 deg.C and then at 130-165 deg.C with 100% relative humidity. The material is then pre-cooled and finally cooled, thus reducing the deterioration rate.</p> |
