PURPOSE:Natural cheese, as a starting material is combined with water and they are mixed at such a level as both components mixes with each other uniformly, but the mixture does not reach emulsion, then the mixture is subjected to freeze-drying to give the title cheese of a variety of properties and forms suitable for various applications. CONSTITUTION:Natural cheese, as a starting material, such as edam cheese or its combination is crushed by cutting or grating. The grated cheese is combined with water and mixed uniformly by means of a chopper at cheese temperature of about 0-40 deg.C. The mixture is adjusted in its mixing state and placed in a vessel suitable for desired used, then freeze-drying is effected to give the objective cheese. USE:An ingredient of Chinese noodles, Western soup, snack or topping materials.
