PURPOSE:To prepare an imitation sea food having the texture, taste and flavor of shrimp, lobster, or salmon, etc., by subjecting ground fish meat paste to the processes such as deaeration, aging, etc. CONSTITUTION:Fish meat paste is added with water, salt, flavor, seasoning and a springiness-controlling agent such as starch, and stirred to effect the mixing and the deaeration. The kneaded fish meat mixture is aged for a definite time, and sliced to a definite size, e.g. to 3-7mmX3-7mm cube with 0.1-0.8mm in thickness. Separately, fish meat paste is mixed with water, salt, flavor, seasoning and springiness-controlling agent, stirred, and optionally deaerated to obtain the meat for bonding. 20-40pts.wt. of the bonding meat is mixed with 60-80pts.wt. of the sliced meat prepared above, and the mixture is formed in the form of a shrimp, lobster, etc., and heated e.g. at 80-95 deg.C for 10-25min. |
