NEW MATERIAL:A yeast Saccharomyces (FRM17VM2-2) S1 (FERM P-7794) having high safety and excellent agglutinative property. USE:A yeast for the production of an alcohol such as ethanol. PREPARATION:A yeast having excellent agglutinative property and excellent alcoholic fermentation capability [Saccharomyces FRM17VM2-2 (FERM P-7889)] is sporulated, and the obtained spore is cultured. The yeast FRM17VM2-2 used as the starting material can be prepared by carrying out the protoplast fusion treatment of a yeast having agglutinative property [Saccharomyces cerevisiae MM-17 (FERM P-7770)] with a yeast free from agglutinative property [Saccharomyces cerevisiae VM-2 (FERM P-7788)], and culturing the fused cell. |
