CONSTITUTION:Minced meat of pork, beef, etc. and vegetables as major ingredient are blended with other ingredients and water, kneaded to give the main ingredient 1, the dent part 2 is made in the main ingredient, and the cooked ingredient 3 to be packed different from the main ingredient in shape, flavoring, etc. is put in the dent part 2. Then, the main ingredient 1 is covered with the pastry 4 of wheat flour which is kneaded with water and drawn except part in the vicinity of the center of the main ingredient at the top, and steamed to give the aimed SHAO-MAI. Ingredients comprising 45pts.wt. minced pork, 27pts.wt. finely cut onion, 12pts.wt. starch, 5pts.wt. wheat flour, and 5pts.wt. seasoning may be cited as the main ingredient 1 of SHAO-MAI. Ingredients comprising 80pts.wt. seasoned prawn or crab and 20pts.wt. ground fish may be shown as an example of the ingredient 3 to be packed.
