摘要 PURPOSE:To produce MISO (fermented bean paste) having enriched Ca component and improved taste and flavor, and effective for the promotion of health, by dehydrating an animal material in hot oil, squeezing and extracting to remove the oil, dissolving the resultant powdery seasoning component in water, and adding the solution to the raw material of MISO in a proper stage of the MISO production process. CONSTITUTION:Soybeans are washed with water, soaked, boiled on a slow fire for about 5hr, and rounded into a MISO ball while it is still hot. The ball is pressed to form a flat plate, and mixed with seed malt, salt and water. The mixture is further mixed with the above powdery seasoning component and the soup produced by the boiling of soybeans, and stirred thoroughly. The product is fermented and ripened in a definite vessel, and if necessary ground, to obtain the objective MISO. The above powdery seasoning component can be prepared by throwing an animal raw material such as chicken, dried bonito, etc. in an oil heated at about 120 deg.C, squeezing to remove the oil after the completion of dehydration, treating with a deoiling agent such as n-hexane to remove the oil, and pulverizing the product.
