PURPOSE:To enable the production of protein fiber in a narrow space, by placing a coagulation liquid supplying part at the downstream part of a spinning apparatus, extending a reaction tube for the simultaneous flowing of a protein fiber and a coagulation liquid from the above supplying part, and spirally winding a flexible reaction tube constituting a part of the reaction tube. CONSTITUTION:Salted meat paste prepared by adding salt to fish or live-stock meat is extruded through a number of nozzles of a spinning apparatus 5 into a coagulation liquid consisting of an aqueous solution of a protein-denaturation agent to obtain a fiberous meat having controlled fiber strength. In the above apparatus for the production of protein fiber, a coagulation liquid supplying part 33 is placed at the downstream side of the apparatus 5, a reaction tube 41 to flow the protein fiber and the coagulation liquid at the same time is extended from the supplying part 33, a flexible material is used as at least a part of the above reaction tube 41, the reaction tube 41 is wound in the form of spiral 44, and the end of the reaction tube 41 is placed close to the dehydration apparatus 7. A protein fiber having uniform degree of coagulation can be produced automatically in a narrow space. |
