In a hop drying installation with layers of hops to be dried arranged one above the other or alongside one another, hot air being passed through the hops on hurdles, transport belts or the like, the fresh air is directly heated via an open gas flame, which is preferably the flame of a gas surface burner, a suction fan which supplies fresh air directing the heated air towards and through the layers of hops. The gas surface burner is inserted into the stream of air of the suction fan in such a way that it has flame outlet apertures which are directed into or transversely to the stream of air and through which the stream of air is directly heated.
