<p>PURPOSE:To make it possible to use a carrot for a food throughout the year, by slicing a raw carrot, and drying the resultant slices in a hot dryer under specific conditions. CONSTITUTION:Pellicle of a raw carrot washed with water is removed by a peeler, and cut thin into slices of thickness within 0.5-1mm. range. The resultant slices are then charged into a hot dryer at 60-65 deg.C and damp-dried for 1-1hr 30min. If the slices are dried at <=60 deg.C, much drying time is required, and the product is discolored or putrifaction is caused. If the slices are dried at a temperature as high as >=65 deg.C in a short time, the product is boiled to destroy the nutritive value. When the moisture content is reduced to <=5%, the slices are taken out, placed in a grinder and pulverized.</p> |
