PURPOSE:To prepare a frozen liver of angler fish preservable for a long period in a frozen state, having a taste, etc. similar to those obtained by boiling a liver of angler fish in a fresh state and when it is stored in a frozen state for a long period and thawed or boiled. CONSTITUTION:Liver of angler fish is washed with a solution of salt having 1- 3 deg. baume degree, blood is removed from it, preferably it is preserved in salt, or blood is removed and it is preserved in salt, it is boiled at 80-100 deg.C for 10- 15min, and blood vessel is removed from it. The pretreated liver of angler fish is subjected to vacuum packaging in an airtight bag or container, boiled or steamed at 80-100 deg.C for 10-40min and frozen. |
