A diffuser for extracting comminuted sugar cane by a percolating extraction liquid which is supplied to a bed of sugar cane in a trough having a sieve plate and a drive device for advancing the bed and is collected under the sieve plate and resupplied, in which the collection devices arranged below the sieve plate are connected to a device for production of low pressure which increases the percolation velocity by the action of suction and in which a separation device is connected in the return lines for the extraction liquid to the diffuser in such a manner to separate juice and air from each other so that the disadvantages resulting from a long residence time of the sugar cane in the diffuser, such as sugar destruction, discolouration etc., are avoided or substantially reduced.
