PURPOSE:To prepare the titled food which can be recooked or preserved for a long period, easily and rapidly, by sealing the food to be cooked in a packaging bag together with a proper amount of water, steaming or boiling the food, and packaging in vacuum in an almost aseptic state while keeping the water-content of the food below the saturated level. CONSTITUTION:The food to be cooked (e.g. unpolished rice) is soaked sufficiently with water, drained, added with a proper amount of water, and charged into a packaging bag (e.g. made of a plastic sheet). The air in the bag is exhausted, and the bag is sealed (e.g. by heat-sealing). The sealed bag is steamed or boiled in hot water or a pressure cooker, and cooled. The water in the bag is absorbed completely, and the objective food is obtained in anhydrous and evacuated state.
