The apparatus comprises a dynamic holding device (14, 15) arranged downstream of the heating equipment (7), a static holding unit (22) arranged immediately downstream of the pH-adjusting means (20) and above the filtration assembly (34) and a container (33) receiving the drawn-off product, by means of gravity, in the static holding unit (22), the said container (33) being arranged beneath the said unit (22) in a position adjacent to the filtration assembly (34). A whey- protein milk is obtained, the whey proteins being in the coagulated state. This milk may be added to manufacturing milk intended for cheese production. <IMAGE> |
