PURPOSE:To produce liqueur having a color and fragrant component of P. frutescens, by adding an eluted substance obtained from salt-containing UME (a Japanese apricot) vinegar or P. frutescens vineger by resin adsorption method to SAKE (liquor). CONSTITUTION:An eluted substance obtained by removing simultaneously salt and acidic component from UME vinegar or P. frutescens vinegar by resin adsorption method is added to SAKE (liquor). The UME vinegar or P. frutescens vinegar is obtained by immersing P. frutescens in a salt-containing aqueous solution of citric acid. A method of direct addition of the eluted substance, a method of concentration of the eluted substance under reduced pressure, removal of ethanol and addition of the eluted substance, or a method of dilution of the eluted substance with about 1-2wt% aqueous solution of citric acid and addition of it, may be cited as the method of adding the substance eluted from the adsorption resin to SAKE. |
