Sweetening compsns. contain a protein sweetener (I), saccharing and a taste modifier which is an aldohexuronic acid (II) or a salt, amide or lactone of (II) esp. an acid of formula (IIA): (where one of R1 and R2=carboxyl and the other =H; each of the pairs R3/R4, R5/R6 and R7/R8=H and OH). The protein sweetener (I) is pref. thaumatin or monellin. Used as sweeteners for medicines, foods and drinks. (II) does not have a sweetening effect alone, but it accentuates the sweetening effet of the other components and reduces or eliminates their after-taste. |
