<p>PURPOSE:To prepare a delicious frozen chestnut cookable easily at any time independent of the season, by steaming the skinned raw chestnut, freezing quickly at a specific temperature, and storing in a sealed plastic bag. CONSTITUTION:Skinned raw chestnut is immersed in a solution of burnt alum containing 0.05% burnt alum and 0.1% ascorbic acid solution, steamed, and then frozen quickly at <=-30 deg.C preferably by spraying liquid nitrogen. The frozen chestnut is sealed in a plastic bag and maintained at <=-18 deg.C to obtain the objective frozen chestnut. EFFECT:Frozen chestnut having excellent hardness and color can be prepared by the immersion treatment.</p> |
