PURPOSE:To improve the bitter taste and unagreeable aftertaste of a stevia sweetener composed mainly of steviol glucoside, without lowering the sweetness of the stevia sweetener, by transferring and adding glucose to a steviol glucoside using an enzyme. CONSTITUTION:Glucose is transferred and added from beta-1,3-glycosyl saccharide compound such as laminarin, curdlan, etc. to a steviol glucoside by using a beta-1,3- glucosyl transferase obtained from actinomycetes belonging to Streptomyces genus. |
