<p>PURPOSE:To prevent change in color of potatoes, and to reduce transportation cost, by immersing the potato from which the skin is peeled off in an aqueous solution of a mixture of alum and potassium chloride, preserving them. CONSTITUTION:Raw potatoes from which the skin is peeled off is immersed in an aqueous solution of 0.5-1.0kg alum and 0.3-0.5kg potassium chloride in 50kg water in a state noncontact with air for about 2-4hr, then the potatoes are put in a container having an aqueous solution of alum and potassium with the same composition as that of the aqueous solution, the container is closed and the potatoes are preserved.</p> |
