PURPOSE:To enable accurate measurement of sugar by a method wherein a dextran hydrolytic enzyme is added to a gruel- or liquid-like sample taken for analysis of sugar in a beet, a lead salt is added to obtain a transparent filtrate with a better filterability by filtering off a coagulation generated. CONSTITUTION:500-50 unit of a dextran hydrolytic enzyme is added to 26g of a gruel- or liquid-like sample obtained by grinding a beet and made to react therewith in neutrality at the normal temperature with agitation. After 30sec-10min, a basic lead acetate solution is added to the mixture and a coagulation generated is filtered off. The sugar level during the filtration is measured with a saccharimeter. Thus, the proten coagulation due to the action of the lead salt with the decomposition of the dextran by dextrase is improved in the filterability to prevent the disturbing of the measurement as unavoidably caused when the transmission light is scattered by a turbid component. Especially, this prevents delay in the filtering speed and the turbidity of the filtration possible during a long-time storage outdoors or in beets badly contaminated by microorganisms. |
