Process consists of extraction from the carcase through a perforation knife connected by a flexible hose to a tank; supplying an anti-coagulant to the drainage knife, where it is mixed with the extracted blood; passing the mixt. through a plate heat exchanger for cooling by a refrigeration plant consisting of a compressor, cooler and condenser; and finally storing the blood in an insulated container.
