PURPOSE:To obtain the titled compound useful as a peptide sweetener, easily, in high yield, by reacting alpha-L-aspartyl-L-phenylalanine dimethyl ester in a mixture of methanol and hydrochloric acid under specific condition. CONSTITUTION:alpha-L-Aspartyl-L-phenylalanine dimethyl ester is dissolved at a concentration of 0.01-0.3mol/dl in a mixture of methanol and hydrochloric acid composed of 0-10vol% of methanol, 8-55vol% of concentrated hydrochloric acid and the rest part of water, and the solution is maintained at 0-60 deg.C to precipitate alpha-L-aspartyl-L-phenylalanine methyl ester in the form of hydrochloride. If necessary, the objective compound is obtained as a free ester by neutralizing the salt with an alkali.
