PURPOSE:To enable the preservation of coffee for a long period, by using a disoxidation agent prepared by impregnating granular slaked lime with water, covering the surface of the lime with fine filler, mixing the granules with iron powder and an electrolyte, and sealing the resultant composition in a specific packaging material. CONSTITUTION:Granular slaked lime having particle diameter of 0.5-3mm. is impregnated with water or a moisture-controlling liquid prepared by dissolving an inorganic compound (e.g. alkali metal salt) or an organic compound (e.g. polyhydric alcohol) in water to adjust the water-content of the lime to 1-35%. The surface of the treated lime is covered with 1-10%, based on the whole composition, of a fine filler finer than 100 mesh (e.g. talc). A composition composed of the obtained granules, iron powder, and an electrolyte (e.g. calcium chloride) is sealed in a packaging material having a gas-permeability of 5,000- 100,000sec/100 mlair (JIS P 8117) and a moisture permeability of <=17g/m<2>.24hr (JIS Z 0208) to obtain a disoxidation agent, which is sealed together with roasted coffee in a gas-impermeable bag.
