PURPOSE:To obtain the titled food free from fish-like smell and collapse of shape, edible together with bone, by immersing highly fatty fishes in an acidic solution, heat-treating them under pressure in a retort from which air is removed, applying a natural antioxidant to the surfaces of them, freezing them. CONSTITUTION:Highly fatty fishes such as mackerel, sardines, etc. which, if necessary, are dressed cut into pieces, are immersed in an acidic solution (e.g., citric acid solution) at 2-5pH, heat-treated under pressure in a retort from which air is removed to elute excess fats, a natural antioxidant (e.g., natural tocopherol, etc.) is applied to the surfaces of them, and they are frozen, to give the desired food. EFFECT:Having improved long-period storage stability.
