PURPOSE:A solid roux food that is prepared by using starch hydrolyzate, thus showing good flavor, smell and viscosity by short-time heating, and high storability and giving good and smooth texture with low viscosity on cooking. CONSTITUTION:An edible solid fat softening at higher than 25 deg.C in normal states, table salt, sugar, curry powder, seasonings such as sauce and a starch hydrolyzate obtained by hydrolyzing startch with an enzyme to a level of less than 50 DE, are mixed and heated usually at 50-120 deg.C for 5-40min. The solid fat is used by 15-60wt% based on the whole weight including water and the amount of the starch hydrolyzate is 20-40wt%. |
