<p>An improved method for immobilizing enzymes in flocculated whole microbial cells in which the cells are treated with a water-insoluble binding agent, particularly casein, and thereafter with a polycationic flocculating agent and a polyanionic flocculating agent, immobilised enzymes in aggregate particles produced by the method and a process for performing an enzyme-catalysed reaction using the particles. Preferably the enzyme is flucose isomerase and the process is for the conversion of glucose to fructose.</p> |
