Change-over to defrosting is effected when the increase in the gap between the temperature of the fluid of the cold source and the temperature of the refrigerating fluid at the entry to the evaporator (14, 15, 16) passes a maximum value. Changing back to normal functioning is effected when the temperature of the refrigerating fluid at the entry to the evaporator passes a minimum value. These change-overs are controlled by a microprocessor (28) which also fixes minimum and maximum limits for the periods of normal functioning and of defrosting.
