PURPOSE:A jelly-like granular food that is composed of a gel obtained by allowing a water-soluble alginate sol containing more than 40% of sweetening saccharides to gel with a polyvalent metal salt, thus keeping elastic texture without hardening for a long period of time. CONSTITUTION:A sol of about 0.5-3% aqueous solution of an alginate salt such as sodium alginate is combined with about 40% or more sweeteners such as sucrose, glucose or maltose. Then, about 0.5-20% aqueous solution of a polyvalent metal salt such as calcium lactate or aluminum chloride is added to the above sol to effect gelation, then the gel granules are separated and washed with water to give the objective jelly-like granular food. |
