CONSTITUTION:Noodle lines are cut from a noodle belt prepared by a conventional procedure, cut into a given length to give raw noodles having 35-38wt% water content, which are put in a synthetic resin film bag having a large number of small holes with 3-8mm. diameter on the side, and sealed hermetically. It is directly fed to a hot-air dryer, and dried at low temperature for a long time, for example, by 40-70 deg.C hot air for 30-60min.
