<p>PURPOSE:To prepare a clear and nice wine, by removing a pectinous material and pulpy material from a pressed juice of a citrus fruit, adjusting the content of organic acids, and using the resultant clear fruit juice as a raw material. CONSTITUTION:A pressed juice of a citrus fruit is treated with a pectolytic enzyme decomposing pectin to decompose the pectinous material. The resultant treated pressed juice is then separated from a pulpy material, and the content of organic acids in the pressed juice is adjusted to 0.3-0.7%, preferably 0.5- 0.6%, before or/and after the treatment to give a clear fruit juice, which is then used as a fruit juice for fermentation and fermented at ordinary temperature.</p> |
