Xylitol was prepd. from the waste of agricultural products. Thus, Aspergillus niger KG-79 was cultured in a medium contg. wheat chaff 160g, barley straw 40g, and H2O 150g at 30≦̸C for 3 days to give xylanase (enzyme activity =40 /mL), which was inoculated into a NaOH soln. contg. 1000g barley straw and incubated from 24 hrs. to give 116g xylitol.
