PURPOSE:To prepare a bagged TOFU (bean curd) coagulated with calcium chloride, by adding a large amount of sodium citrate as a pH-buffering agent to soya milk, thereby enabling the smooth bagging operation even by adding a sufficient amount of calcium chloride. CONSTITUTION:Soya milk having a concentration of about 12% and obtained by conventional process, is mixed with about 0.1%, based on the soya milk, of sodium citrate as a pH-buffering agent. About 0.12% of calcium chloride is added as a coagulant to the soya milk, and the mixture is mixed thoroughly, filled in a blow-molded container, sealed, and sterilized by boiling to obtain the product. By the use of sodium citrate as a pH-buffering agent, the bagging operation can be carried out smoothly even in the presence of calcium chloride. |
