To produce circulating hot air, the baking oven (1, 2) has a blower and at least one heating body assigned thereto. The baking grates (7), which can be inserted into the baking oven or into a charging frame (3) of the baking oven, are provided with a tubular or band-shaped meandering radiant heating body (15). Each baking grate (7) is provided with a plug (16) which is connected to the radiant heating body (15) and, on insertion of the baking grate (7), engages in a corresponding socket (18) of the baking oven or of the charging frame (3). The sockets (18) are connected to a switching and control device of the baking oven, which device, by means of an adjustable temperature control and with temperature rising towards a set value, first partially switches off the blower heating and switches on the radiant heating bodies (15), then completely switches off the blower heating and finally switches off the radiant heating bodies (15). By means of these baking grates (7) and the control of their radiant heating bodies (15), a uniform heating of flat products to be baked can be achieved over the entire surface of the baking grates. <IMAGE>
