PROCESS FOR PREPARING LEGUMES.

A process for preparing legumes or maize is disclosed, in which cooking and/or soaking times are reduced thanks to a cooking constituent comprising a softening agent. Said softening agent does not affect flavour of neither the legumes nor maize. The softening agent may be blended with additional components such as aromatizing products, herbs and spices.
