PROBLEM TO BE SOLVED: To prepare a fried bean curd having a flavor. SOLUTION: This method for producing a fried bean curd comprises adding an extract of a spice such as a mustard and/or an emulsion of the extract and/or an emulsion type perfume as a flavor ingredient to a soybean milk, preparing a bean curd (dough) and then frying the resultant bean curd in an oil. The fried bean curd excellent in flavor without any loss in shape, etc., is obtained as the product. |
